Here in our house, we love a good summer salad. Growing up, my mom always had different kind of salads on the dinner table, and our favourites were all the ones with fruit on them. Since my husband thinks fruit on salad is the best thing since sliced bread, it’s been a summer tradition we’ve adopted in our own household now too.
Since it’s the middle of fresh fruit season in the Fraser Valley, we have an abundance of them here in our kitchen. And seriously. They smell SO good. While I could probably eat all of the strawberries just as they are and not get tired of them, it’s still nice to mix things up a little bit. I found this recipe for Strawberry Champagne Vinaigrette a few years ago, and it’s now one of those that’s dog eared and splattered in the way only a well loved recipe can be.
It’s quick, easy and stores well – although it probably won’t last very long once you make it! It will go good with almost any kind of salad, but it’s the best with spinach, almonds and either goat cheese or feta cheese as a topping. So good!

Ingredients
- 1-1/2 cups strawberries
- 2 tablespoons lemon juice
- 2 tablespoons sugar (can be omitted or reduced if you are watching your sugar intake)
- 1 tablespoons champagne vinegar
- 1 tablespoons olive oil
Instructions
- Combine the strawberries, lemon juice, sugar, and vinegar in a blender and puree until smooth. Add the olive oil and pulse until combined.
